Cauliflower is a very under rated veg! I think because it’s white no one thinks it’s special – ahh!!
I love it – especially raw or crunchy like this recipe. Cauliflower is from the cruciferous family which makes it particularly fab because these contain, among other things glucosinolates. These natural phytonutrients which serve to protect the vegetables from pests and disease in turn protect us from cancer. This amazing family of vegetables also contain something called indole-3-carbinoles which evidence suggests helps protect us from oestrogen cancers because they help detoxify unwanted hormones. Personally I choose organic cauliflower because it tastes great and you are maximising all these wonderful phytonutrients.
Cauliflower, cut into little pieces
Sea salt and black pepper
2 tsp olive oil
pinch of ground cumin
1 tbsp Tamari
pinch of cayenne pepper or paprika
1. Place all the ingredients in a large bag or bowl. Mix thoroughly and leave to stand for 5 minutes.
2. Bake in the oven for 15-20 mins at 180C.
